The inside of the citrus
fruit holds segments of fruit pulp which are made of little sacs which
we call pulp cells or just "cells". A good fruit cells
product contains as few as possible pieces of outer skin
(flavedo), inner skin (albedo) and pits. We give this aspect
priority, even if to obtain a "cleaner" product more of
the sacs are broken in the process.
The texture of this this
product is that of a fine purée, and is mostly used in
fruit preparations, or to give a more natural mouthfeel to the
juices.
